I love good chicken salad passionately, and I don’t discriminate. Chicken salad with with grapes and walnuts, wine country chicken salad, chicken salad with off beat herbs and chicken salad made with grilled chicken – I love them all.
My favorite chicken salad is the simple one that my grandmother and mom have always made. Simple baked or poached chicken, mayonnaise, celery, salt and pepper. I have made a few tweaks to make it a little healthier, but it is still nostalgically delicious.
Simple Chicken Salad
3 boneless skinless chicken breasts, baked or poached, finely chopped
3 stalks celery, finely diced
2 teaspoons sweet pickle relish
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/4 teaspoon onion powder
1 to 2 teaspoons fresh lemon juice, to taste
Toss together chicken and celery in large bowl. In a smaller bowl, combine the mayonnaise, yogurt and onion powder. Stir mayonnaise mixture into chicken by spoonful, adding only enough to reach your preferred chicken salad consistency. Add lemon juice, salt and pepper to taste.
